Our Story

Founded by Chef Humayun Zadran, a former restaurateur from Kabul and refugee to the U.S., Zadran’s Kitchen is built on a passion for reviving traditional recipes and sharing them with new communities. From Afghan dumplings and seasonal bowls to modern small bites, every dish is prepared with care and a story worth sharing.

From Northern Virginia to burg!

A Commitment to Community

Zadran's Kitchen began as a mission by Humayun Zadran to bring authentic Afghan cuisine to Northern Virginia. Our identity was forged in the local farmers markets and caterings, where engaging with our neighbors taught us the true value of a local food ecosystem. Today, that mission has found a permanent home in the heart of Fredericksburg. While we're opening a storefront, we remain a family business rooted in heritage and a passion for our community.

At Zadran's Kitchen, we believe the best food doesn't just taste good, it does good. We honor ancient Afghan culinary traditions by showcasing the best of the Rappahannock region. Our menu is a collaboration between our heritage and local soil. Whenever possible, we source directly from the farmers, butchers, and artisans we stood alongside at the markets. By prioritizing local ingredients like hardy Virginia greens and autumn-harvested root vegetables, we ensure peak freshness while investing back into the family farms that are the backbone of our community.

Honoring the Seasons

We cook with the rhythm of the earth. In the spirit of traditional Afghan cooking, we adapt to the seasons rather than forcing nature to adapt to us. As the seasons shift in the Rappahannock Valley—from the high-summer tomatoes to the sweet winter parsnips and storage onions—our menu evolves. This hybrid approach allows us to maintain the highest quality standards while ensuring every plate tells a story of local craftsmanship and Afghan tradition.

Thank you for being part of our journey from the farmers market to Wolfe Street, and for supporting the local food ecosystem of Fredericksburg.
